Ingredients
3 large eggs
¾ cup granulated sugar
½ cup plain or sparkling water
1 cup milk
1 cup vegetable oil
3 ¼ cups all-purpose flour
1 Tbsp baking powder
2 packets vanilla sugar (or 2 tsp vanilla extract)
Zest of 1 lemon
1 lb (16 oz) frozen sour cherries, thawed and well drained
Powdered sugar, for dusting
Instructions
Preheat oven to 400°F (200°C). Grease a large rectangular baking pan or line with parchment paper.
In a large bowl, beat the eggs with sugar until light and fluffy. Add water, milk, oil, vanilla, and lemon zest. Mix well. Gradually add flour mixed with baking powder and stir until smooth.
Pour the batter into the prepared pan. Distribute the thawed cherries evenly over the top.
Bake for 30 minutes, or until golden and a toothpick inserted in the center comes out clean.
Let cool completely. Cut into squares and dust with powdered sugar before serving.
