Ingredients (Serves 4)

  • 4 large bell peppers (any color you like)
  • ½ cup uncooked long-grain rice
  • 4 oz mild cheese, cubed (cheddar, mozzarella, or your favorite)
  • 1 egg, lightly whisked
  • 2 tablespoons fresh parsley, chopped
  • 1 clove garlic, minced
  • ¼ cup milk
  • ¼ cup plain yogurt
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: a pinch of smoked paprika for a subtle kick

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the rice until it is halfway done, then drain. In a bowl, mix the partially cooked rice with cubed cheese, egg, parsley, garlic, salt, pepper, and smoked paprika if using.
  3. Cut the tops off the peppers and remove the seeds. Fill each pepper with the rice-cheese mixture, pressing gently to pack the filling.
  4. Place the peppers upright in a lightly greased baking dish, drizzle with olive oil, and add a couple of tablespoons of water to the bottom to keep them moist.
  5. Bake for 25–30 minutes until the peppers are tender and the cheese is melted.
  6. Mix milk and yogurt and spread a thin layer on the serving plate. Place the baked peppers on top and serve warm.

Tip: Serve alongside a fresh green salad or drizzle with a little balsamic reduction for extra flavor.

Directions

  2. In a bowl, combine seitan, oats, vegetable broth, olive oil, soy sauce, salt, flour, and any optional seasonings. Mix until it forms a pliable filling.
  3. Place a portion of the filling in the center of each cabbage leaf, fold over the sides, and roll tightly.
  4. Arrange the rolls in a greased baking dish, lightly brush with oil, and cover with foil. Bake at 285°F (140°C) for 30 minutes.
  5. Remove the foil, increase the oven to 355°F (180°C), and bake another 15–20 minutes until the rolls have a slight golden crust.

Serving suggestion: Enjoy with a tomato-based sauce or a drizzle of vegan sour cream for extra richness.

Roasted Peppers Stuffed with Tomato, Onion & Basil

This fresh, Mediterranean-inspired version of stuffed peppers is light, vibrant, and easy to prepare. Quick roasting brings out the sweetness of the peppers and softens the filling beautifully.

Ingredients (Serves 4)

  • 4 red bell peppers
  • ½ lb (250 g) fresh tomatoes, chopped
  • 1 small onion, finely diced
  • 1 cup fresh basil leaves, chopped
  • 3 garlic cloves, minced
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: a few drops of balsamic vinegar for added depth

Directions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Slice the peppers in half lengthwise, remove seeds, and place cut-side up in the dish.
  3. In a bowl, combine tomatoes, onion, basil, garlic, olive oil, salt, and pepper. Spoon the mixture evenly into each pepper half.
