Some dishes taste like a place. Caprese Chicken Salad tastes like the Amalfi Coast in July — sun-warmed tomatoes, milky fresh mozzarella, and basil that smells like it was picked five minutes ago. The original Insalata Caprese was born on the island of Capri in the 1950s, allegedly created as a patriotic nod to the Italian flag: red tomatoes, white mozzarella, green basil. Local trattorias served it as a light antipasto, never imagining that decades later, home cooks and chefs across the Atlantic would add grilled chicken and transform it into a protein-packed main course that dominates summer lunch tables from California to Connecticut.

What makes Caprese Chicken Salad explode in popularity every June has everything to do with seasonality and simplicity. Heirloom tomatoes reach their sugary peak in mid-summer, fresh mozzarella is at its creamy best when the weather turns warm, and basil bushes grow so aggressively that gardeners are desperate for ways to use them. Add a perfectly charred chicken breast, and suddenly a side dish becomes a complete meal that feels indulgent yet virtuous. No heavy dressing, no complicated technique — just quality ingredients allowed to speak for themselves. It is the dish Pinterest boards and Mediterranean diet enthusiasts dream about from January through May, then devour weekly from June through September.

The magic lies in contrast. Hot, smoky chicken against cold, silky mozzarella. Acidic tomato against sweet-tart balsamic reduction. Peppery basil against grassy olive oil. Every bite delivers temperature play and texture drama without requiring a culinary degree. In an era of complicated meal prep and fifteen-ingredient grain bowls, Caprese Chicken Salad offers something radical: a five-minute assembly that looks like it came from a restaurant patio overlooking the Mediterranean.

Caprese Chicken Salad

Ingredients:

  • 2 boneless, skinless chicken breasts (about 8 oz each)
  • 2 tablespoons olive oil, divided
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 2 large heirloom tomatoes (red and yellow), sliced 1/4-inch thick
  • 8 oz fresh mozzarella, sliced 1/4-inch thick
  • 1 cup fresh basil leaves
  • 2 tablespoons balsamic glaze (reduced balsamic vinegar)
  • 1 tablespoon extra virgin olive oil, for drizzling
  • Flaky sea salt, for finishing
  • Freshly cracked black pepper, for finishing

Instructions:

Pound chicken breasts to an even 3/4-inch thickness using a meat mallet or heavy skillet. Pat dry with paper towels. Rub with 1 tablespoon olive oil, then season evenly with Italian seasoning, garlic powder, salt, and pepper.

Heat a grill pan or outdoor grill over medium-high heat. Brush with remaining 1 tablespoon olive oil. Grill chicken 5–6 minutes per side until internal temperature reaches 165°F. Transfer to a cutting board and let rest 5 minutes before slicing against the grain into 1/2-inch strips.

Arrange tomato slices, mozzarella slices, and grilled chicken on a large serving platter or board, alternating and slightly overlapping them. Tuck fresh basil leaves between the layers.

Drizzle balsamic glaze and extra virgin olive oil over the entire arrangement. Finish with flaky sea salt and freshly cracked black pepper. Serve immediately while the chicken is still warm against the cool cheese and tomatoes.
