Bruschetta is a popular and easy-to-make appetizer that’s perfect for any occasion. Made with fresh tomatoes, cheese, basil, and toasted bread, it’s full of flavor and ready in just a few minutes.
Ingredients:
- 1 ciabatta bread
- 3 cloves garlic
- 9 oz (about 1 ½ cups) cherry or grape tomatoes (preferably a mix of red and yellow if available)
- 5 oz goat cheese or fresh mozzarella
- 10 black olives (pitted)
- 1 small bunch fresh basil
- Extra virgin olive oil
- Salt and black pepper, to taste
Preparation:
Slice the ciabatta into slightly thicker slices. On a well-heated grill or grill pan, toast the slices on both sides with a little olive oil.
For the topping, rinse and dry the cherry tomatoes. Halve or quarter them depending on their size.
Finely chop two cloves of garlic. In a bowl, combine the cherry tomatoes, chopped goat cheese (or chopped mozzarella), minced garlic, sliced olives, and torn basil leaves.
Season with salt and pepper, then drizzle with 4–5 tablespoons of olive oil. Mix well, then spoon the mixture over the toasted bread slices.
