Baked Peppers with Cheese are a simple yet flavorful Italian-inspired appetizer. Sweet red peppers are roasted to golden perfection, stuffed with creamy mozzarella, briny olives, and a hint of fresh herbs and spices. This dish is perfect as a starter, side dish, or even a light lunch. Adding a touch of oregano and crushed red pepper gives it a gentle, aromatic kick.

Ingredients

4 small red bell peppers, halved and seeded

½ cup chopped black olives (about 10–12)

3 oz soft white cheese (mozzarella or ricotta)

3 tablespoons breadcrumbs

½ cup white wine

3 tablespoons olive oil

1 teaspoon chopped fresh parsley

1 teaspoon chopped fresh mint

½ teaspoon crushed red pepper (optional, for extra flavor)

Freshly ground black pepper to taste

Instructions

Preheat oven to 350°F. Lightly grease a shallow baking dish.

Arrange the pepper halves in the dish, cut side up.

Sprinkle olives, garlic (optional), and crumbled cheese over the peppers.

Add breadcrumbs on top, then pour the white wine and olive oil evenly over the peppers.

Sprinkle fresh parsley, mint, crushed red pepper, and black pepper on top.

Bake 30–40 minutes, until peppers are tender and slightly golden.

Serve warm and enjoy!
