Ingredients:

  • 1 Pork Tenderloin
  • 150 grams of thinly sliced homemade bacon
  • 400 grams of potatoes
  • 1–2 tablespoons of lard
  • 1 tablespoon of flour
  • 1–2 teaspoons red pepper powder
  • Salt, pepper, and optional spices (like garlic powder, thyme, or oregano)
  • 2 tablespoons capers
  • Water

Instructions:

  1. Season the pork: Mix red pepper powder, salt, pepper, and your favorite spices. Rub the mixture evenly over the pork tenderloin.
  2. Wrap in bacon: Carefully wrap the tenderloin with the bacon slices and secure them with toothpicks.
  3. Pre-cook the potatoes: Peel and slice the potatoes, then boil them in salted water until just tender.
  4. Bake the pork: Place the bacon-wrapped tenderloin in a preheated oven at 200–220°C (about 400–430°F). Bake for 30 minutes.
  5. Add potatoes: After 30 minutes, turn the tenderloin and add the boiled potatoes to the baking dish. Continue baking until the pork is cooked through and the potatoes turn golden brown.
  6. Make the caper sauce: In a small pan, melt the lard. Stir in the flour and cook briefly. Gradually add water while stirring to create a smooth sauce. Add capers and season with salt and pepper to taste.
  7. Serve: Slice the tenderloin and serve with roasted potatoes and caper sauce on the side.
