Here’s an interesting recipe for a German dessert known as Amerikaneri (American cookies). The ingredients below are for 10 cookies (I usually make a double batch):
Ingredients:
- 100 g margarine or butter
- 100 g sugar
- 1 packet of vanilla sugar
- 2 eggs
- A pinch of salt
- 1 packet of vanilla pudding powder
- 5 tablespoons of milk
- 250 g flour
- 3 teaspoons of baking powder (for a double batch, I use a full tablespoon)
Instructions:
- Mix the Ingredients: Beat the sugar and eggs together, then add the remaining ingredients. You’ll get a sticky mixture.
- Shape the Cookies: Use a spoon to shape the mixture into circles on a baking sheet lined with parchment paper. They don’t have to be perfectly shaped, as they will rise and round out nicely while baking.
- Bake: Bake in a preheated oven at 200°C (392°F) for about 10 minutes. They shouldn’t turn golden brown, as they will be less moist and tender if they do. You want them to stay light in color.
- Glaze: Once cooled, drizzle with various icings. A simple glaze made from powdered sugar can be enhanced with lemon juice if desired. Melted chocolate is also a great option. I made these yesterday and used a yogurt-strawberry glaze from the brand “Schwartau,” which turned out delicious.
