These are amazing recipes with mushrooms.

Mushroom Stew

Ingredients:

– as many types of mushrooms as possible,
– potatoes (as you like),
– garlic, onion, spices – that you like (basil, rosemary, red pepper, salt, pepper, maybe a little white…).

Way of preparation:
Chop the onion and garlic. Peel the potatoes and cut them into cubes. Mushrooms (oysters, champignons, chanterelles, porcini mushrooms,…) are washed and chopped. Put the oil in a large bowl, add the onion and garlic, and after a few seconds, add the mushrooms. Fry until they release the water. About halfway through frying, add all the spices except the wine. After the mushrooms have drained – add water as desired (whatever amount you intend to make). Add the potatoes and let it cook. Cook until the potatoes are soft, that is, they are edible. Add a little wine and cook for another minute. During cooking – try and add more spices if something is missing.

Mushrooms with peanuts

Ingredients:
500g or two cans of 230 grams (drained mass) of champignons,
2 medium onions,
1 large red pepper,
2 cups of roasted peanuts in the shell,
oil,
pepper, soy sauce, salt as desired,
coriander, ginger (or Kotanyi spice mix for Chinese cuisine),
marjoram or other herbs.

Preparation:
Cut the onion into half-moons and the pepper into 1cm*4cm strips and sauté in oil until the onion becomes glassy. Add sliced and cleaned mushrooms (or mushrooms from a can without the water in which they were preserved) and simmer for ten minutes, adding water if necessary. Add coriander, ginger and pepper or Kotanyi spice mix, marjoram and a little soy sauce and mix everything. At the end, add shelled peanuts that you can pre-fry on a dry pan. Serve with rice.

Best, quick mushroom soup

300-400 grams of mushrooms,
Chop the onion and simmer covered to let the mushrooms release water, then add
spices as desired (coriander) and 2 medium-sized potatoes, cut into 1-2 cm cubes.
Stir a little more, add water to cover,
cook until the potatoes are soft.
If desired, mix with a stick mixer.
Add a tablespoon or two of soy milk per serving.
