Oven-Baked Sea Bream with Vegetables

Ingredients:

  • 1 whole sea bream (about 1¾ lb), cleaned
  • 1 lemon (sliced)
  • 3 garlic cloves, sliced
  • 1 small onion, sliced
  • 1 carrot, sliced
  • 1 small celery stalk, sliced
  • 2 tablespoons olive oil
  • 1 bay leaf
  • Fresh rosemary (1 small sprig)
  • Fresh thyme (a few sprigs)
  • Salt, to taste
  • Black pepper, to taste
  • ¼ cup water or white wine

Instructions:
Preheat the oven to 390°F. Lightly grease a baking dish with olive oil. Season the sea bream inside and out with salt and pepper. Arrange the vegetables in the dish, place the fish on top, and add lemon slices, garlic, herbs, and bay leaf. Drizzle with olive oil and pour in water or wine. Cover loosely with foil and bake for 40 minutes. Remove foil and bake for another 10 minutes until lightly golden.

Crispy Carp in Beer Batter

Ingredients:

  • 2 lb carp fillets, cut into pieces
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • 2 eggs
  • 1 cup light beer
  • Vegetable oil, for frying

Instructions:
Pat the fish dry and season lightly with salt. In a bowl, mix flour, baking powder, paprika, and salt. Whisk in eggs and beer until a smooth batter forms. Heat oil in a deep pan over medium heat. Dip each piece of fish into the batter and fry until golden brown on all sides. Drain on paper towels and serve warm.

Trout with Walnut Sauce

Ingredients:

  • 2 whole trout (about 2¼ lb total), cleaned
  • 1 cup finely ground walnuts
  • 2 garlic cloves
  • 1 slice white bread, crust removed
  • ¾ cup milk
  • Salt, to taste

Instructions:
Bake or grill the trout at 390°F for about 20–25 minutes, until cooked through. Soak the bread in milk, then blend with garlic and walnuts until smooth. Season with salt. Gently warm the sauce and spoon it over the trout just before serving.

Baked Stuffed Hake

Ingredients:

  • 2 lb hake fillets
  • 1 cup mushrooms, finely chopped
  • 1 small onion, finely chopped
  • 1 egg
  • ¼ cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

Instructions:
Preheat the oven to 390°F. Sauté mushrooms and onion in olive oil until soft. Remove from heat and mix with egg, breadcrumbs, parsley, salt, and pepper. Spread the filling over the hake fillets, roll gently, and place in a baking dish. Drizzle with olive oil and bake for 25 minutes until cooked and lightly golden.
