If you’re looking for a lighter, veggie-packed alternative to traditional pizza, this zucchini pizza recipe is a simple and satisfying option. Instead of dough, fresh zucchini acts as the base, creating a naturally low-carb and flavorful dish that’s perfect for weeknight dinners or a quick healthy snack.

Ingredients:
4–6 medium zucchini
1 (8 oz) can tomato sauce
1 teaspoon dried oregano
Salt and black pepper, to taste
1/2 cup thinly sliced onion rings
1 cup shredded mozzarella cheese


Instructions:
Preheat your oven to 350°F.
Wash the zucchini and slice them in half lengthwise.
Carefully scoop out the center flesh using a spoon, then chop it into small pieces.
In a bowl, combine the diced zucchini with tomato sauce, oregano, salt, and pepper.
Spoon the mixture back into each hollowed zucchini half.
Place sliced onion rings on top of each piece.
Sprinkle shredded mozzarella evenly over the zucchini.
Arrange on a baking dish and bake for 25–30 minutes, or until the zucchini is tender and the cheese is melted and slightly golden.


Tip: Zucchini sizes can vary, so adjust the filling as needed. Medium zucchini usually work best for even cooking.
