A simple and flavorful vegetable casserole featuring zucchini, cabbage, and tomatoes, finished with a sprinkle of Parmesan. Perfect as a side dish or light main course.
Ingredients
3 tablespoons butter
2 small onions, chopped
1 pound small zucchini, sliced into thin rounds
1 small head of cabbage, thinly sliced
2/3 cup water
1 cup fresh tomatoes, cut into wedges
2 teaspoons salt
2 teaspoons dried Italian seasoning
1 teaspoon dried oregano
1/4 teaspoon black pepper
1 teaspoon curry powder
1/2 cup grated Parmesan cheese
Instructions
In a large sauté pan, melt the butter over medium-high heat for 1–2 minutes.
Add the chopped onions and sauté for 1–2 minutes until soft and fragrant.
Add the zucchini and cabbage, cooking on high heat for 8–10 minutes, stirring occasionally.
Stir in the tomato wedges, salt, Italian seasoning, oregano, black pepper, and curry powder. Simmer for a few minutes until the tomatoes soften.
Before serving, sprinkle with grated Parmesan cheese. Serve warm.
Tip
Add a drizzle of olive oil or a pinch of crushed red pepper for extra flavor.
