Easy Spinach Salad with Feta

Ingredients:

  • Fresh spinach leaves
  • Brine from a jar of black olives
  • 1 tablespoon balsamic vinegar
  • 2–3 tablespoons olive oil
  • Feta cheese, cubed

Instructions:

  1. Wash the spinach thoroughly and cut it into smaller pieces. Place it in a deep bowl.
  2. Pour the brine from a jar of black olives over the spinach and mix well. Alternatively, you can place the spinach and brine in a plastic bag, tie it, and shake it gently to coat the leaves.
  3. Once the spinach absorbs the brine, drain the liquid and transfer the leaves to a salad bowl.
  4. Drizzle with a mixture of balsamic vinegar and olive oil. No extra salt is needed since the brine and feta will add plenty of flavor.
  5. Top with cubes of feta cheese and serve fresh.

This salad makes a perfect side dish or a light, nutrient-packed lunch.
