This simple and versatile veggie pancake recipe is a great way to enjoy a mix of vegetables in a delicious form..
Ingredients:
Flour
Eggs
Vegies: potatoes, carrots, zucchinis, capsicum, onions…
oil / margarine
Process
Grate all the vegies into a large bowl. There may be plenty of juices so you may have to pour some off.
Add flour and egg to thicken mix – you’ll need to be generous.
Have cubs form their own then cook with the oil or butter. The pancake will take a while to cook.
serve with Tomato or BBQ sauce.
Variations
Add meat – use mince meat and leave the mix sloppy.
The above are the base vegies, mix in any others that you dare.
Use corn meal instead of flour.
