Zucchini Fruit Compote
Ingredients:
- 2 medium zucchini
- 6 cups water
- ½ teaspoon citric acid or juice from 1 lemon
- 1¼ cups water
- 2 cups sugar
- 2 packets pineapple-flavored drink mix (like Kool-Aid or similar)
Instructions:
- Peel the zucchini, remove the seeds, and slice into rounds or small cubes.
- In a large pot, bring 6 cups of water and citric acid (or lemon juice) to a boil.
- Add zucchini and simmer for about 15 minutes until slightly tender.
- Drain the zucchini and let it cool. Save the cooking water.
- In a separate pot, boil 1¼ cups of water with the sugar to make a syrup. Let it cool completely.
- Mix the cooled syrup with the pineapple drink mix and the reserved zucchini cooking water.
- Add the cooled zucchini pieces to the mixture.
- Chill well and serve cold as a fruity dessert.
Golden Pear Compote
This traditional pear compote recipe uses firm, ripe pears gently cooked with vanilla and lemon. It’s a simple, elegant dessert served chilled—perfect on its own or with a scoop of ice cream.
Ingredients:
- 2½ to 3 pounds firm, ripe pears
- 1 lemon (juice only)
- ¾ to 1 cup sugar (to taste)
- 1 small piece of vanilla bean or 1 teaspoon vanilla extract
- 4–5 cups water
Instructions:
- Peel the pears and cut them into quarters, removing the core.
- In a large saucepan, combine the pears with water, lemon juice, sugar, and vanilla.
- Bring to a boil, then reduce heat and simmer until pears are soft and golden (about 15–20 minutes).
- Carefully remove the pears and place them in a serving bowl.
