  • 1¾ lbs ricotta cheese
  • 1 egg yolk
  • 1¾ cups parmesan, grated
  • salt, pepper, nutmeg to taste
  • 14 oz cannelloni tubes, uncooked
  • 12 black olives
  • 10 cherry tomatoes

INSTRUCTIONS

Toast pine nuts in dry skillet until golden. Cool and chop.

Make bechamel: Melt butter. Sauté onions until soft. Add flour. Cook 1 minute. Gradually whisk in milk until smooth. Add sage and lemon zest. Season.

Clean and chop mushrooms. Sauté in olive oil until browned. Season. Cool. Mix with ricotta, pine nuts, parsley, egg yolk, and 1¼ cups parmesan. Season.

Spread ½ inch bechamel in baking dish. Fill cannelloni with ricotta mixture. Arrange in dish. Cover completely with remaining bechamel. Top with remaining parmesan.

Bake at 350°F for 30 minutes. Add sage sprigs, halved tomatoes, and olives. Finish baking 10 minutes until golden.

RECIPE 3: SPINACH CANNELLONI

INGREDIENTS

  • 1⅓ lbs fresh or frozen spinach
  • 7 oz egg-free cannelloni tubes
  • 3 shallots, diced
  • 3 garlic cloves, minced
  • 4 tablespoons olive oil
  • salt to taste
  • 2 tablespoons butter
  • 3 tablespoons thick soy cream

Sauce:

  • 6 tablespoons butter
  • 6 tablespoons all-purpose flour
  • ¾ cup unsweetened soy milk
  • salt to taste
  • pinch of ground nutmeg

INSTRUCTIONS

Cook spinach until wilted. Drain thoroughly.

Sauté shallots in olive oil. Add spinach, garlic, soy cream, and salt.

Make sauce: Melt butter. Whisk in flour. Cook 1 minute. Gradually add soy milk, stirring until thickened. Season.

Fill cannelloni with spinach. Arrange in dish. Cover completely with sauce. Dot with butter.

Bake at 400°F for 40 minutes.
