Nothing beats the taste of homemade ice cream on a warm summer day. Made with naturally sweet frozen bananas and your favorite berries, this creamy frozen dessert is free from artificial flavors and comes together in just minutes. A touch of vanilla, crunchy toasted nuts, and rich dark chocolate create a delicious combination of flavors and textures. For an extra twist, add a pinch of sea salt or a splash of fresh lemon juice to brighten the fruity flavors. It’s an easy, wholesome dessert the whole family will love.
Ingredients
- 2 ripe bananas, sliced and frozen
- 1/2 cup frozen strawberries or your favorite frozen berries (blueberries, raspberries, or mango work well)
- 3 tablespoons unsweetened coconut milk or almond milk
- 1 teaspoon pure vanilla extract
- 1 teaspoon fresh lemon juice (optional, for extra freshness)
Optional Mix-Ins
- 1 ounce dark chocolate, chopped
- 2 tablespoons chopped toasted walnuts or almonds
- 1 tablespoon honey or maple syrup (optional)
- 1/2 teaspoon ground cinnamon or 1 teaspoon unsweetened cocoa powder
- Pinch of sea salt (optional, enhances the flavor)
Instructions
- Place the frozen bananas, frozen berries, coconut milk, vanilla extract, and lemon juice (if using) into a high-powered blender or food processor.
- Blend until the mixture is smooth, thick, and creamy, stopping to scrape down the sides as needed.
- If you prefer a sweeter or richer flavor, blend in the honey (or maple syrup), cinnamon, cocoa powder, or a pinch of sea salt.
- Fold in the chopped dark chocolate and toasted nuts by hand, leaving small pieces throughout the ice cream for added texture.
- For a soft-serve consistency, serve immediately.
- For a firmer, scoopable ice cream, transfer the mixture to a freezer-safe container and freeze for about 2 hours.
- Let the ice cream sit at room temperature for 5 to 10 minutes before scooping if it becomes too firm.
Enjoy topped with fresh berries, shaved chocolate, toasted coconut, or chopped nuts.
