Vegan Oatmeal Cake with Cherries or Apples

Ingredients:

  • 1 kg cherries (or apples)
  • 3 tablespoons sugar
  • 1 tablespoon whole wheat flour
  • 200 g rolled oats
  • 100 g whole wheat flour
  • 100 g margarine
  • 100 g sugar
  • 1 tablespoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon baking powder
  • ½ cup water
  • Vanilla sugar

Preparation: Drain the cherries and mix them with 3 tablespoons of sugar and 1 tablespoon of whole wheat flour. Mix the oats with the flour (100 g), and add margarine, sugar, cinnamon, and nutmeg. Make the dough by adding water. Grease and flour a baking pan, spread the cherries in it, and evenly distribute the dough on top using your hands. Bake in a preheated oven at 200°C for 30-40 minutes. Once baked, sprinkle with vanilla sugar.

Beer and Walnut Cake

Ingredients:

  • 3 cups oil
  • 3 cups semolina
  • 4 cups beer
  • 1 teaspoon baking powder
  • 4 cups flour
  • 200 g dried raisins
  • 200 g ground walnuts
  • 6 cups sugar
  • 6 cups water
  • 1 lemon

Preparation: Add the ingredients one by one to a bowl, mix gently, pour into a greased pan, and bake. Once the cake is baked, pour a syrup made from sugar, water, and lemon slices over it. Once cooled, cut into cubes.

Potato Cake

Ingredients:

  • 200 g potatoes
  • 125 g margarine
  • 120 g sugar
  • 50 g walnuts
  • 250 g flour
  • 1 egg
  • ½ teaspoon baking powder
  • Zest of ½ lemon
  • Vanilla sugar
  • Jam or fruit preserve for spreading

Preparation: Boil the potatoes, mash them, and mix with margarine, sugar, finely chopped walnuts, flour (with half of the baking powder), one egg, lemon zest, and vanilla sugar. Mix the dough smoothly, divide it into two parts. Grease a baking pan, place the first dough layer, spread jam or fruit preserve on it, and place the second dough layer. Bake until golden brown.
