There are desserts that shout, and then there are desserts that glow quietly. This lemon pie belongs to the second kind. It’s the sort of recipe you make on a slow afternoon, when the kitchen smells like citrus zest and something comforting is happening in the oven. Bright, balanced, and gently nostalgic, this pie pairs a silky lemon filling with a soft, cloud-like meringue — a classic reimagined with a few thoughtful touches that make it feel unmistakably homemade.

Ingredients

Lemon Filling

  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 1/2 cups cold water
  • 3 large egg yolks, lightly beaten
  • Zest of 1 large lemon
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Crust

  • 1 fully baked 9-inch pie crust (homemade or store-bought)

Meringue Topping

  • 3 large egg whites, room temperature
  • 1/3 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract

Directions

  1. In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually add the cold water, whisking until completely smooth.
  2. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and begins to bubble. Let it gently boil for about 1 minute.
  3. Slowly whisk a small amount of the hot mixture into the egg yolks to temper them, then pour the yolks back into the saucepan. Cook for another minute, stirring continuously.
  4. Remove from heat and stir in the butter, lemon zest, lemon juice, and vanilla extract. Pour the hot lemon filling into the prepared pie crust.
  5. In a clean mixing bowl, beat the egg whites on high speed until foamy. Add the cream of tartar, then gradually add the sugar, beating until stiff, glossy peaks form. Beat in the vanilla.
  6. Spread the meringue over the hot filling, making sure it touches and seals against the crust edges. Create soft peaks with the back of a spoon.
  7. Bake at 350°F for 15–20 minutes, or until the meringue is lightly golden.
  8. Cool completely on a wire rack, then refrigerate for at least 2 hours before slicing.
