There are many variations of stuffed peppers. Each recipe is easy to make. The unique flavor of this dish comes from the different ingredients used.
Ingredients:
- 8 bell peppers
- 1 large onion
- 1 medium potato
- 1 cup rice (uncooked)
- 2-3 tomatoes
- 1 bunch fresh parsley
- Black pepper, salt, paprika powder, cooking oil, and canned tomato paste (2 tablespoons)
Instructions:
- Prepare the Ingredients:
- Clean and finely chop the onion.
- Peel and finely grate the potato.
- Cook the Filling:
- Sauté the onion and grated potato in a pan with a little oil and a splash of water until softened.
- Add the rice, salt, and black pepper, and cook for a few minutes.
- Stir in the chopped parsley and continue cooking until the rice starts to soften but is not fully cooked.
- Stuff the Peppers:
- Remove the seeds from the bell peppers and fill them with the prepared mixture.
- Place a slice of tomato on top of each stuffed pepper to act as a “lid.”
- Arrange the peppers upright in a deep pot.
- Cook the Peppers:
- Add enough water to the pot to almost cover the peppers.
- Mix 2 tablespoons of tomato paste into the water.
- Cover and cook on low heat for about 35 minutes.
- Finish with Paprika Oil:
- In a small pan, heat a little oil and briefly sauté some paprika powder.
- Pour this mixture into the pot with the peppers, and let it simmer for a few more minutes.
- Serve:
- Serve the stuffed peppers warm. They pair well with bread or a side salad.
