Freshly baked and bursting with sweet, fruity flavor, strawberry bread is the ultimate treat for any occasion. With its moist texture, warm hints of cinnamon, and crunchy pecans, this classic recipe transforms simple ingredients into a crowd-pleasing delight. Whether enjoyed with a morning coffee or as a midday snack, each slice is a comforting reminder of homemade goodness.
Ingredients:
- 3 cups flour, sifted
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 2 cups sugar
- 4 eggs, beaten (or equivalent egg substitute)
- 1 1/2 cups vegetable oil
- 1 cup chopped pecans or walnuts
- 1 1/2 pints strawberries, washed and stemmed
Instructions:
- Preheat the oven to 350°F.
- In a bowl, combine flour, baking soda, salt, cinnamon, and sugar; mix well.
- In a separate bowl, mix the eggs and oil, then add to the dry ingredients.
- Stir in the nuts.
- Fold in the strawberries until the mixture is moistened.
- Pour the batter into two greased 9 x 5-inch loaf pans.
- Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool on a wire rack. Makes two loaves.
