When the season changes and fresh greens fill the market stalls, it’s the perfect time to make a Spring Greens Pie. What’s great about this recipe is not just the taste, but the ease of preparation—no complicated steps, just simple ingredients that come together beautifully.
Ingredients:
- 700 g spinach (or chard)
- 10 g salt
- 400 g full-fat white cheese (or feta)
- 4 eggs
- 200 ml sour cream
- 200 ml milk
- 200 ml vegetable oil
- 600 g ready-made thin filo dough sheets
Preparation:
- Remove the stems from each spinach leaf (or chard). You can cut them in the middle of the leaf. Wash the spinach thoroughly and then slice it into thin strips. Soak the greens in salted water for a while. Once soaked, drain well and press out excess water. Add a pinch of salt and let it sit again for a few minutes, then drain once more.
- In a separate bowl, combine the cheese, egg yolks, sour cream, and well-beaten egg whites. Add the milk, a pinch of salt, and mix everything gently until smooth.
- Grease a baking tray and lay down 2-3 sheets of filo dough at the bottom. Drizzle with a little oil, then spread a portion of the cheese and spinach mixture over the sheets. You can fold the dough in layers like a pleated design for texture. Repeat the process until all the ingredients are used up.
- Once all layers are assembled, cover the pie with a whole sheet of filo dough. Press the edges down gently, and brush the top with a bit of oil.
- Place the pie in a preheated oven at 250°C (480°F). Bake for around 30 minutes or until golden brown. Lower the temperature to 200°C (390°F) and bake for an additional 10 minutes.
- Once done, remove the pie from the oven and let it cool for a bit. Cut it into pieces, arrange them on a plate, and serve warm.
