There’s a quiet comfort in recipes that ask for nothing more than humble ingredients and a bit of patience. These spinach patties — are exactly that: simple and deeply satisfying. Made with just fresh greens, eggs, and a handful of pantry staples, they offer a crisp exterior, a tender center, and a whisper of garlic in every bite. Passed down through neighbors and generations, this is food meant for everyday tables — no fuss, no flash, just honest flavor.

Ingredients:

  • 2.2 lbs (1 kg) fresh spinach
  • 2 eggs
  • All-purpose flour, as needed
  • 1 garlic clove, finely minced
  • 1 tsp vegetable seasoning (like Vegeta)
  • Oil, for frying

Instructions:

  1. Wash and finely chop the spinach. (Tip: Stack several leaves and slice them together for speed.)
  2. In a large mixing bowl, beat the eggs, then add the chopped spinach. Mix by hand to release the moisture from the spinach.
  3. Add the minced garlic and vegetable seasoning.
  4. Gradually add flour, one tablespoon at a time, mixing until the mixture holds together but remains slightly soft.
  5. Chill the mixture in the refrigerator for 1 hour.
  6. Shape into patties and fry in oil over medium heat until golden on both sides.
