Soft, savory, and full of flavor, these spinach dumplings are a quick and healthy side dish. They’re light, cheesy, and perfect for pairing with your favorite meats or creamy sauces.
(Serves 4)
You will need:
2.2 lbs spinach
3.5 oz grated cheese
10.5 oz fresh cheese (like farmer’s cheese or ricotta)
2 eggs
salt and pepper to taste
Instructions:
Clean, cook, and chop the spinach (or puree it) and mix in the grated cheese. In a separate bowl, combine the fresh cheese, eggs, salt, and pepper, then add this mixture to the spinach. If the cheese is very fresh and the mixture is too runny, you can add a little flour. Shape the mixture into walnut-sized dumplings and cook them in boiling salted water for about 10 minutes.
This light side dish pairs well with meat dishes and sauces.
