Spiced Almond Jam Cake feels like a nostalgic hug — soft, fragrant layers filled with sweet plum jam and topped with a delicate lemon glaze. The flavors deepen as it rests, turning each bite into a blend of cozy spice and gentle sweetness. It’s the kind of dessert that belongs beside a cup of tea, a knit sweater, and a golden autumn view.
Ingredients:
1 cup sugar
1 cup unsalted butter, softened
2 cups all-purpose flour
2 cups finely ground almonds (or almond flour)
1 large egg
1 teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon nutmeg (optional, adds warmth)
2 cups plum jam or mixed berry preserves (for filling)
Zest and juice of 1 lemon
2 cups powdered sugar (for glaze)
1–2 tablespoons water (as needed)
Instructions:
In a large bowl, cream together butter and sugar until light and fluffy. Add the egg, lemon zest, and spices, mixing until smooth. Gradually blend in the flour and ground almonds until a soft dough forms.
Divide the dough into 4 equal portions. Instead of rolling, gently flatten small pieces of dough on parchment paper to form thin, rustic layers. Bake each layer at 350°F (175°C) for about 10–12 minutes, or until lightly golden.
While still warm, spread each layer with a generous spoonful of plum jam or berry preserves. Stack the layers on top of each other and gently press down to set.
In a small bowl, whisk together powdered sugar, lemon juice, and just enough water to make a thick but pourable glaze. Drizzle or pipe it decoratively over the cooled cake.
Let the cake rest covered at room temperature for 1–2 days — it becomes wonderfully soft and full of flavor over time. Slice into squares or bars before serving.
