Spanakopita is a delicious Greek pie made with spinach and cheese wrapped in crispy filo pastry. It’s easy to make.

Ingredients:

1 cup olive oil, plus extra for brushing

2 cups chopped onion

1 teaspoon dried oregano

1 teaspoon dried basil

2 pounds fresh spinach, washed and roughly chopped

4 cloves garlic, minced

2 tablespoons all-purpose flour

8 ounces feta cheese, crumbled

¾ cup ricotta or cottage cheese

1 teaspoon black pepper

12 sheets filo pastry

Salt to taste

Instructions:
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add onions, oregano, basil, and a pinch of salt. Cook until onions soften, about 4–5 minutes. Stir in spinach and cook until just wilted. Lower the heat, add garlic and flour, and cook another 2 minutes. Remove from heat and mix in the cheeses and pepper. Taste and adjust salt if needed.

Brush a baking pan with olive oil. Layer 6 sheets of filo, brushing lightly with oil between each sheet. Spread half of the spinach mixture evenly on top. Layer 6 more filo sheets, brush with oil, then spread the remaining filling. Finish with remaining filo sheets, brushing the top generously with oil and tucking the edges inward.

Bake in a preheated oven at 375°F for 35–40 minutes, until the top is golden and crisp. Let it rest a few minutes before slicing. Serve warm.
