Simple, comforting dish with smoked ribs, sauerkraut, and potatoes cooked together for rich flavor. Great for a cozy dinner.
Ingredients (Serves 4)
1 1/3 pounds smoked pork ribs
1 pound sauerkraut (shredded)
1 tablespoon paprika
1 medium onion
5.5 ounces smoked bacon
2 bay leaves
20 whole peppercorns
1 pound potatoes (about 8 small)
Salt and ground black pepper to taste
Instructions
Cut the ribs into smaller pieces and rinse. Place in a large pot, cover with water, and bring to a boil. Let simmer for a few minutes.
If the water isn’t too salty, add the sauerkraut to the same pot and continue to simmer on low heat.
Chop the onion. Dice the bacon and cook it in a pan until golden. Add the onion and sauté until soft. Stir in the paprika at the end, then add everything to the pot with the ribs and sauerkraut.
Add bay leaves and peppercorns. Let it all cook slowly.
In a separate pot, boil the potatoes until slightly tender. Add them to the sauerkraut and ribs. Let everything simmer until fully cooked and tender.
Serve everything together on a plate: ribs, sauerkraut, and potatoes.
