Autumn brings turkey season — and nothing completes a roast turkey like a hearty, homemade stuffing. This traditional recipe uses chicken liver, fresh herbs, and milk-soaked bread for a rich, rustic flavor that’s perfect for any holiday table.
Ingredients:
- 10 oz chicken liver
- 3 bread rolls or sandwich buns (about 5 oz total)
- ¾ cup whole milk
- 1 large egg
- ½ bunch fresh parsley, finely chopped
- 1 small onion, finely chopped
- Salt and black pepper, to taste
- Toothpicks or kitchen twine, for sealing the turkey
Preparation:
Rinse and pat dry the chicken liver, then puree it in a food processor or mash thoroughly. Soak the bread in milk for 10 minutes, then squeeze out excess liquid.
In a large bowl, combine the liver, soaked bread, egg, parsley, onion, salt, and pepper. Mix until fully incorporated.
Use the mixture to stuff your turkey. Seal the cavity with toothpicks or tie closed with kitchen twine. Roast the turkey as usual.
