Savory pie is full of fresh spring onions and tasty cheese. It’s easy to make and perfect for breakfast, lunch, or a light dinner. Great for spring and summer!

Savory Spring Onion and Cheese Pie

Ingredients:

  • 1 bunch spring onions (about 8 oz / 225 g), cleaned and chopped
  • 1 2/3 cups plain yogurt (about 400 ml)
  • 1 cup crumbled white cheese or feta (about 8 oz / 225 g)
  • 4 large eggs
  • 2 cups all-purpose flour (about 8.8 oz / 250 g)
  • 1 teaspoon baking powder
  • 1 tablespoon sesame seeds
  • Salt, to taste
  • Oil, for greasing and sautéing

Instructions:

  1. Preheat the oven to 400°F (200°C). Lightly grease a 12×8 inch (30×20 cm) baking pan and sprinkle with a little flour.
  2. In a skillet, heat a little oil and sauté the chopped spring onions until soft. Set aside.
  3. In a large bowl, beat the eggs with a pinch of salt until frothy. Gradually whisk in the yogurt until smooth.
  4. In a separate bowl, sift together the flour and baking powder. Slowly add this to the wet ingredients, mixing well to combine.
  5. Stir in the crumbled cheese and the sautéed spring onions. Mix everything until evenly blended.
  6. Pour the batter into the prepared pan and sprinkle the sesame seeds evenly on top.
  7. Bake in the preheated oven for about 35-40 minutes, or until the crust is golden brown and a toothpick inserted in the center comes out clean.
  8. Let the pie cool slightly before slicing. Serve warm or at room temperature.
