Savory pie is full of fresh spring onions and tasty cheese. It’s easy to make and perfect for breakfast, lunch, or a light dinner. Great for spring and summer!
Savory Spring Onion and Cheese Pie
Ingredients:
- 1 bunch spring onions (about 8 oz / 225 g), cleaned and chopped
- 1 2/3 cups plain yogurt (about 400 ml)
- 1 cup crumbled white cheese or feta (about 8 oz / 225 g)
- 4 large eggs
- 2 cups all-purpose flour (about 8.8 oz / 250 g)
- 1 teaspoon baking powder
- 1 tablespoon sesame seeds
- Salt, to taste
- Oil, for greasing and sautéing
Instructions:
- Preheat the oven to 400°F (200°C). Lightly grease a 12×8 inch (30×20 cm) baking pan and sprinkle with a little flour.
- In a skillet, heat a little oil and sauté the chopped spring onions until soft. Set aside.
- In a large bowl, beat the eggs with a pinch of salt until frothy. Gradually whisk in the yogurt until smooth.
- In a separate bowl, sift together the flour and baking powder. Slowly add this to the wet ingredients, mixing well to combine.
- Stir in the crumbled cheese and the sautéed spring onions. Mix everything until evenly blended.
- Pour the batter into the prepared pan and sprinkle the sesame seeds evenly on top.
- Bake in the preheated oven for about 35-40 minutes, or until the crust is golden brown and a toothpick inserted in the center comes out clean.
- Let the pie cool slightly before slicing. Serve warm or at room temperature.
