Here’s a bright and satisfying salad that perfectly balances savory, sweet, and fresh flavors. Tender potatoes mingle with crunchy celery and carrots, juicy apple slices, and smoky ham, all lightly dressed for a crisp, refreshing bite. It’s the kind of dish that works for any occasion — from a casual lunch to a cozy dinner spread.
Serves 4
Ingredients:
- 2.2 lbs potatoes
- 14 oz carrots and celery (combined)
- 2 ½ cups vegetable broth
- Salt and pepper, to taste
- 4 tablespoons vinegar
- ½ tablespoon mustard
- ½ tablespoon mayonnaise
- 7 oz apples
- 5 oz smoked ham
- 3 tablespoons oil
Instructions:
- Scrub the potatoes well and cook them in their skins for about 20 minutes, until tender. Drain and let cool.
- Peel and slice the carrots and celery, then simmer them briefly in the vegetable broth until just tender.
- Peel the cooked potatoes, slice them into rounds, and season lightly with salt and pepper. Mix the vinegar and mayonnaise into the warm vegetable broth with mustard, then pour this mixture over the potatoes. Let sit for about 15 minutes to absorb the flavors.
- Peel and core the apples, then slice them thinly. Cut the ham into strips. Add both to the potatoes, drizzle with oil, and toss gently to combine.
Serve chilled or at room temperature — it’s hearty, colorful, and has that perfect balance of tangy and savory that makes it disappear fast.
