This flavorful homemade spread combines smoky roasted red peppers and tomatoes, perfect as a condiment or side dish to enjoy throughout the winter.
Ingredients:
15 lbs long red peppers, roasted on the grill, peeled, and seeded
5 cups tomatoes, roasted in the oven and peeled
10 oz hot chili peppers
2 ½ cups vegetable oil
2 cups apple cider vinegar
1 teaspoon sugar (adjust to taste)
2 cloves garlic, minced
Fresh parsley, chopped (to taste)
Salt (to taste)
Additional hot chili pepper (optional, to taste)
Instructions:
- Heat half of the oil in a large pan. Add the roasted tomatoes and cook until thickened.
- Stir in sugar, apple cider vinegar, and hot chili peppers. Cook for a few more minutes.
- Add the remaining oil and sliced roasted red peppers cut into strips.
- Simmer or sauté the mixture for about 40 minutes, stirring occasionally.
- Pour the hot spread into warm sterilized jars. Place jars in the oven briefly to form a thin skin on top, then seal tightly.
