A legendary Hungarian dessert with a romantic past, Rigó Jancsi Cake is a rich chocolate sponge layered with airy chocolate cream and finished with a glossy glaze. Elegant yet deeply indulgent, this cake brings together soft texture, smooth filling, and a refined chocolate finish—just like a classic European pastry shop creation.
Ingredients:
For the Cake:
- 4 large eggs, separated
- 1/2 cup powdered sugar
- 7 tablespoons unsalted butter, melted
- 2/3 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
For the Chocolate Filling:
- 2 1/2 cups heavy cream
- 1 cup dark chocolate, melted and slightly cooled
- 1/4 cup sugar
- 1 teaspoon vanilla extract
For the Chocolate Glaze:
- 5 oz dark chocolate
- 5 tablespoons unsalted butter
- 3–4 tablespoons apricot jam
For Decoration:
- Sliced or whole almonds
Instructions:
Preheat the oven to 400°F. Line a square baking pan with parchment paper and lightly grease it.
In a bowl, beat egg yolks with half of the powdered sugar until pale and creamy.
In another bowl, whip egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and beat until stiff peaks form.
Gently fold the egg yolk mixture into the egg whites. Slowly add melted butter, then sift in flour and cocoa powder. Mix carefully to keep the batter light and airy. Add vanilla.
Pour the batter into the prepared pan and bake for about 18–20 minutes. Let the sponge cool completely, then cut it into two even layers.
For the filling, whip heavy cream with sugar until soft peaks form. Gently fold in melted chocolate and vanilla until smooth and fluffy.
Spread a thin layer of apricot jam over one cake layer. Pour the warm chocolate glaze (melted chocolate and butter) over it and let it set slightly. Once firm, cut this layer into even squares.
Spread the chocolate cream over the second cake layer. Carefully place the pre-cut glazed squares on top.
Refrigerate until fully set. Before serving, slice along the cuts using a warm knife for clean edges. Decorate each piece with almonds.
