Rich Chocolate Cake Delight Ingredients:
Cake Layers:
- 80 g all-purpose flour
- 20 g cocoa powder
- 5 eggs
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 55 g sugar
- 1/4 tsp salt
- 50 ml vegetable oil
- 100 ml milk
- 1 tsp vanilla extract
- 60 g sugar
- 1/2 tsp lemon juice

- 300 ml water
- 40 g cornstarch
- 350 g powdered milk
- 200 g sugar
- 50 g cocoa powder
- 150 g butter

- Cold milk for whipping
Instructions
Cake Layers:
- Grease a 26 cm round springform pan, line the base with parchment paper, and preheat the oven to 180°C (356°F).
- Separate the egg whites from yolks. Beat the whites with 5 tablespoons of sugar until stiff peaks form. Gradually add yolks, whisking until creamy.
- Add oil in a slow stream while mixing. Sift together the flour and cocoa powder, and fold gently into the egg mixture.
- Pour the batter into the prepared pan. Tap the pan lightly on the counter to release air bubbles. Bake for about 23 minutes or until a toothpick comes out clean.
- Remove the baked layer from the pan, discard the parchment paper, and let it cool. Repeat the process for the second layer. Once both layers are cooled, cut each horizontally to make 4 thin layers.
Filling:
- Reserve 200 ml of water. Heat the remaining water with sugar and cocoa powder until combined.
- Dissolve cornstarch in the reserved water. Add this to the cocoa mixture and cook over low heat, stirring constantly, until thickened. Let it cool, covered with plastic wrap to prevent a skin from forming.
- Beat the butter until fluffy. Gradually mix the cooled chocolate base and powdered milk into the butter until smooth and creamy.
Assembling the Cake:
- Spread a thin layer of filling on a serving plate to anchor the cake. Place the first cake layer, then spread 1/3 of the filling evenly over it. Repeat with the remaining layers and filling. Lightly press each layer to ensure it sticks.
- Refrigerate the assembled cake to set the filling.
Decoration:
- Whip the cream with cold milk until stiff. Cover the entire cake with whipped cream, smoothing it out.
- Decorate as desired with additional whipped cream, cocoa powder, or chocolate shavings.
