Ingredients:
- ½ cup unsalted butter, melted
- 1 cup whole milk
- ½ cup packed coconut sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- ¼ cup unsweetened cocoa powder
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup semi-sweet chocolate chunks
- ½ cup chopped hazelnuts or pecans
- 2 tbsp mini white chocolate chips (optional)
Directions:
- Preheat oven to 375°F. Line a 12-cup muffin tin with paper liners or grease lightly.
- In a medium bowl, whisk together melted butter, milk, coconut sugar, egg, and vanilla extract until smooth.
- In a separate large bowl, combine flour, cocoa powder, baking powder, baking soda, and salt.
- Add wet ingredients to dry ingredients and gently fold until just combined. Fold in chocolate chunks, nuts, and optional white chocolate.
- Divide the batter evenly among the muffin cups. Bake for 20–22 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
