Here’s a recipe for a delicious bean stew that is enjoyed in one go. It tastes great even when reheated, although there usually isn’t any left for the next day. This recipe is designed for a large group, but you can adjust the quantities according to your needs.
Ingredients for about 20 people:
- 1 kg of greens and carrots
- 1 bunch of parsley
- 1 kg of onions
- 3 large stalks of leek
- 1 head of garlic
- 3 kg of beans
- 1 kg of smoked sausage
- 1 kg of smoked bacon
- 1 kg of smoked ribs or bones
- 100g of ground sweet paprika
- 1 hot chili pepper or dried paprika
- 1 chocolate bar (for cooking)
- Salt to taste
- 10g of black peppercorns
- 1 dl of oil or 1 tablespoon of lard (lard is better)
Preparation method: Finely chop the onion, leek, carrots, and parsley leaves. Put them in a pot to sauté in oil, occasionally adding water. Add one hot pepper, cleaned garlic, salt, and black peppercorns. Sauté for hours until the mixture softens.
Soak the beans the day before to make them swell, then cook them in water until they reach a boil.
Add the cooked and drained beans to the softened mixture in the pot and add water. Slice the sausage into rings, dice the bacon, and cut the dried ribs or bones into pieces. Add these to the pot and fill with water up to the top. Cook until the beans are soft. Taste and add salt if needed.
Instead of a roux, dissolve the ground paprika in water and add it to the beans, along with the chocolate bar. Cook for at least another half hour until the paprika is well cooked.
Once the beans are ready, serve and enjoy!
Preparation time: 1 hour.
Cooking time: about 6 hours.
