A very easy and tasty cake, ideal for cold days, because it goes well with tea! You can also take it to work or pack it for your children at school as a sweet snack.
Raisin, walnut and orange cake ingredients:
200 grams of flour,
350 grams of raisins,
150 grams of cleaned walnuts,
150 grams of butter,
150 grams of sugar,
3 eggs,
1 orange,
half a bag each of vanilla sugar and baking powder,
little salt
Preparation
Soak the raisins in a bowl of warm water for about 15 minutes. In the meantime, wash the orange and grate its peel. Coarsely chop the walnuts. . Sift flour with baking powder and vanilla sugar into a bowl, add walnuts and drained and wiped raisins, then mix.
In a large bowl, beat softened butter with sugar to get a foamy mixture. Beat the eggs lightly. Add flour to the butter and egg mixture, little by little, mixing after each addition. Add the orange peel and mix carefully.
Pour the mixture into a mold measuring 24×10 cm, previously lined with baking paper and bake the cake for 1 hour and 20 minutes in an oven heated to 160˚C: check if it is baked by piercing it in the middle with a toothpick, which should come out dry.
Let the cake stand for five minutes, then turn it out and let it cool on a wire cake rack.
