Queen Cakes –

What You Need:
125g butter, softened
1 teaspoon vanilla essence
1/2 cup caster sugar
2 eggs
1 cup plain flour
2 teaspoons baking powder
1/2 cup sultanas or mixed fruit
1/4 cup milk

What to Do:

  1. Mix butter, sugar and vanilla until light and fluffy.
  2. Add eggs one at a time, mixing well in between.
  3. Stir flour and baking powder into mixture.
  4. Mix in sultanas or mixed fruit.
  5. Stir in milk.
  6. Put mixture into patty cases in a muffin tin.
  7. Bake at 190oC for 15-20 minutes or until cakes spring back
    when lightly touched.
  8. When cold, dust with icing sugar (optional) picture

Royal Slice


Yield: 1 Batch
250 g Pkt Malt Biscuits (1/2 lb)
125 g Butter (5 oz)
1 c Coconut
1 c Chocolate Chips
1 c Walnuts, chopped
1 c Sweetened Condensed Milk

Place biscuits in a food processor & process until fine crumbs are
formed. Melt butter in a saucepan. Add biscuit crumbs. Mix to
combine. Press mixture into a greased sponge roll tin. Sprinkle over
coconut, chocolate chips & walnuts. Drizzle sweetened condensed milk
over top. Bake at 180C (350F) for 20 minutes. Be careful to watch it
does not burn.
