Potato Pie is perfect for any occasion. With simple ingredients like potatoes, onions, and phyllo dough, this dish is easy to prepare.
Ingredients:
- 16 thin sheets of phyllo dough
- About 2.2 lbs peeled potatoes
- 2 large onions
- Oil (or margarine)
- Salt
- Pepper
Preparation:
Grease a baking dish with oil or margarine. Cut the potatoes into small cubes, drain well, and season with salt and pepper. Add finely chopped onion and mix well.
Lay four sheets of phyllo dough on top of each other, brushing each with a teaspoon of oil. Sprinkle the fourth sheet with grated potatoes, then roll the dough into a log. Brush the rolled dough with more oil. Repeat to make 4 logs of dough.
Bake for about 40 minutes at moderate heat, or until the phyllo dough turns golden brown.
Optionally, you can add sautéed leeks, sliced into thin rings, to the filling for added flavor.
