Ingredients
1 pound pizza dough (store-bought or homemade)
6 button mushrooms, finely chopped
1 cup crushed tomatoes
1 cup shredded mozzarella
¼ cup grated Parmesan
½ cup diced cooked turkey or chicken (instead of ham)
½ teaspoon Italian seasoning
1 small handful baby spinach, chopped
1 tablespoon olive oil
1 egg white (for brushing)
Salt and black pepper, to taste
Instructions
- In a small bowl, mix the crushed tomatoes with olive oil, Italian seasoning, and a pinch of salt and pepper.
- In another bowl, combine the mushrooms, spinach, and diced turkey. Set aside.
- Divide the pizza dough into 8 equal pieces. Roll out each one into a circle about 4 inches wide and press into a muffin pan or small oven-safe bowls. Brush the edges with egg white.
- Spoon a little tomato sauce into each cup, add the mushroom and turkey mixture, and sprinkle with mozzarella and Parmesan.
- Bake at 425°F (220°C) for 10–12 minutes, until the crust turns golden and the cheese melts beautifully.
- Let them cool for a few minutes, then enjoy warm — no fork needed.
