This homemade pie brings together tender greens, aromatic herbs, and a light, creamy egg filling wrapped in golden, crisp filo pastry. It’s a simple yet elegant dish inspired by Mediterranean flavors — perfect for lunch, dinner, or even a savory snack.
Ingredients:
- 1½ lbs fresh mixed greens (spinach, chard, or kale)
- ½ bunch parsley, finely chopped
- ½ bunch dill, chopped
- 3 scallions, thinly sliced
- 2 tbsp fresh mint, chopped
- ½ tsp paprika
- ¼ tsp nutmeg
- Salt and pepper to taste
- 4 eggs, lightly beaten
- ¾ cup crumbled feta cheese
- ¼ cup ricotta or cottage cheese
- ½ cup milk or cream
- 10 sheets filo pastry
- ¼ cup olive oil or melted butter for brushing
Instructions:
- Wash, drain, and chop all the greens. Lightly sauté them in a skillet with olive oil for a few minutes until wilted. Remove excess liquid.
- Combine the cooked greens with herbs, scallions, eggs, cheeses, milk, and seasonings in a large bowl. Mix until everything is evenly combined.
- Preheat the oven to 350°F (175°C). Brush a baking dish with olive oil. Layer 5 sheets of filo, brushing each with oil. Spread the greens mixture evenly, then top with the remaining filo sheets, again brushing each one. Score the top into squares or diamonds.
- Bake for 40–45 minutes, or until golden and crisp. Let cool slightly before slicing.
