Pesto Pizza offers a fresh twist on a classic favorite. Arugula and spinach create a vibrant, green pesto, while pine nuts and feta add a nutty, tangy flavor. Perfect for a light lunch or an easy dinner, it’s both healthy and delicious.
Ingredients:
- 1 1/2 cups fresh arugula leaves
- 1/2 cup fresh spinach leaves
- 1/4 cup toasted pine nuts
- 1/4 cup olive oil
- 1 large garlic clove
- Zest of 1 lemon
- 1 12-inch whole wheat pizza crust
- 1/2 cup halved cherry tomatoes
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
Instructions:
- Preheat oven to 500°F.
- In a food processor, blend arugula, spinach, garlic, pine nuts, olive oil, and lemon zest until smooth to make a fresh pesto.
- Spread the pesto evenly over the whole wheat pizza crust.
- Arrange cherry tomatoes over the pesto. Sprinkle mozzarella and feta cheeses on top.
- Bake for 10–12 minutes or until the cheese is melted and the crust is golden.
- Remove from oven, slice, and serve hot.
