This pepperoni pizza puts a creative, low-carb spin on a classic favorite by swapping traditional dough for a rich, cheesy crust. It’s hearty, satisfying, and perfect when you want all the flavor of pizza without the extra carbs. The creamy base bakes into a golden layer that holds all your favorite toppings beautifully.

Ingredients

For the Crust:

  • 1 (8 oz) package cream cheese, softened
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese

For the Toppings:

  • 1 cup low-carb pizza sauce
  • 6 oz pepperoni slices (lightly sautéed)
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F and lightly grease a 9×13-inch baking dish.
  2. In a mixing bowl, beat the cream cheese and eggs until smooth and creamy.
  3. Stir in the Parmesan cheese and mix until fully combined.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 15–18 minutes, or until the crust is set and lightly golden.
  6. Remove from the oven and increase the temperature to 400°F.
  7. Let the crust cool for about 10 minutes.
  8. Spread a thin layer of pizza sauce over the crust.
  9. Sprinkle mozzarella cheese evenly, then add the sautéed pepperoni on top.
  10. Return to the oven and bake for another 8–10 minutes, until the cheese is melted and bubbly.

Tip; Don’t overload the crust with sauce—keeping it light helps maintain the structure and prevents sogginess.
