This pepperoni pizza puts a creative, low-carb spin on a classic favorite by swapping traditional dough for a rich, cheesy crust. It’s hearty, satisfying, and perfect when you want all the flavor of pizza without the extra carbs. The creamy base bakes into a golden layer that holds all your favorite toppings beautifully.
Ingredients
For the Crust:
- 1 (8 oz) package cream cheese, softened
- 2 large eggs
- 1/4 cup grated Parmesan cheese
For the Toppings:
- 1 cup low-carb pizza sauce
- 6 oz pepperoni slices (lightly sautéed)
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 350°F and lightly grease a 9×13-inch baking dish.
- In a mixing bowl, beat the cream cheese and eggs until smooth and creamy.
- Stir in the Parmesan cheese and mix until fully combined.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 15–18 minutes, or until the crust is set and lightly golden.
- Remove from the oven and increase the temperature to 400°F.
- Let the crust cool for about 10 minutes.
- Spread a thin layer of pizza sauce over the crust.
- Sprinkle mozzarella cheese evenly, then add the sautéed pepperoni on top.
- Return to the oven and bake for another 8–10 minutes, until the cheese is melted and bubbly.
Tip; Don’t overload the crust with sauce—keeping it light helps maintain the structure and prevents sogginess.
