A simple, healthy, and flavorful side dish combining sweet carrots and tender peas. Perfect for family meals or as a quick weeknight side.

Ingredients (Serves 3–4):

  • 1 cup fresh or frozen peas
  • 1 cup diced carrots (about 2 medium carrots)
  • 1 small onion, finely chopped
  • 1 tablespoon olive oil
  • 1/4 cup tomato sauce
  • 1–2 tablespoons breadcrumbs
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 teaspoon chopped fresh mint (optional)
  • 1/4 cup water

Instructions:

  1. Heat olive oil in a medium skillet over medium heat. Add the chopped onion and carrots, sauté until onions turn golden and carrots soften slightly.
  2. Add the water and peas. Stir gently to combine.
  3. Pour in the tomato sauce and sprinkle in breadcrumbs, stirring until the sauce thickens slightly.
  4. Season with salt, pepper, and optional fresh mint.
  5. Cook for another 3–5 minutes until peas are tender but still vibrant green. Serve warm as a side dish.
