A simple, healthy, and flavorful side dish combining sweet carrots and tender peas. Perfect for family meals or as a quick weeknight side.
Ingredients (Serves 3–4):
- 1 cup fresh or frozen peas
- 1 cup diced carrots (about 2 medium carrots)
- 1 small onion, finely chopped
- 1 tablespoon olive oil
- 1/4 cup tomato sauce
- 1–2 tablespoons breadcrumbs
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1 teaspoon chopped fresh mint (optional)
- 1/4 cup water
Instructions:
- Heat olive oil in a medium skillet over medium heat. Add the chopped onion and carrots, sauté until onions turn golden and carrots soften slightly.
- Add the water and peas. Stir gently to combine.
- Pour in the tomato sauce and sprinkle in breadcrumbs, stirring until the sauce thickens slightly.
- Season with salt, pepper, and optional fresh mint.
- Cook for another 3–5 minutes until peas are tender but still vibrant green. Serve warm as a side dish.
