Peanut sauce is a tasty and creamy sauce made from peanuts, coconut milk, and simple spices. The roasted peanuts give it a nutty flavor, and the coconut milk makes it creamy.
Ingredients:
- Peanut oil, for cooking
- 2 cups peanuts
- 3 large shallots, sliced
- 3 garlic cloves, sliced
- 6 Thai bird chiles, minced
- 6 lime leaves, chiffonade
- 1 cup coconut milk
- 2 cups water
- 2 tablespoons sweet soy sauce
- 1 lemon, juiced
- Salt and pepper, to taste
Instructions:
- In a skillet coated with peanut oil, sauté the peanuts until golden brown, about 4 to 6 minutes. Drain on paper towels and let cool.
- Transfer the cooled peanuts to a food processor and grind them finely.
- In the same skillet, add more oil if needed, and sauté the shallots, garlic, and chiles for 2 minutes, until fragrant.
- Add the lime leaves, coconut milk, water, sweet soy sauce, and ground peanuts. Simmer for 15 to 20 minutes, stirring occasionally, until the sauce reaches a pesto-like consistency.
- Stir in the lemon juice and adjust the seasoning with salt and pepper.
- Serve at room temperature.
