Few meals are as satisfying as tender chicken wrapped in a golden, crispy coating. These Parmesan chicken cutlets combine finely grated cheese, crunchy seasoned breadcrumbs, and juicy chicken breast to create a delicious homemade dinner that feels both comforting and special.

The secret is in the coating: Parmesan adds a rich, savory flavor, while a touch of garlic and Italian herbs makes every bite more delicious. Pan-fried until beautifully golden, these chicken cutlets are perfect for a family dinner, served with roasted vegetables, mashed potatoes, or a fresh green salad.

Ingredients

  • 3 large boneless, skinless chicken breasts
  • ¾ cup finely grated Parmesan cheese
  • 1 ½ cups plain cracker crumbs or seasoned breadcrumbs
  • 2 large eggs
  • 2 tablespoons milk
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon paprika
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon salt, or to taste
  • 3 tablespoons all-purpose flour
  • 3 tablespoons butter
  • 2 tablespoons olive oil

Instructions

1. Prepare the chicken

Slice each chicken breast horizontally into two thinner pieces. Place them between two sheets of plastic wrap and gently pound with a meat mallet until approximately ¼ inch thick. This helps the chicken cook evenly and remain tender.

2. Prepare the coating

In a shallow bowl, combine the cracker crumbs, grated Parmesan, garlic powder, Italian seasoning, paprika, black pepper, and salt.

In another bowl, whisk the eggs with the milk until smooth. Place the flour in a third shallow dish.

3. Coat the cutlets

Lightly dust each chicken piece with flour, shaking off any excess. Dip it into the egg mixture, then press it into the Parmesan crumb mixture until both sides are evenly coated.

Arrange the prepared cutlets on a baking sheet lined with parchment paper. Refrigerate for 20–30 minutes to help the coating adhere.

4. Pan-fry until golden

Heat the butter and olive oil in a large skillet over medium heat. Cook the chicken in batches, without overcrowding the pan, for approximately 3–4 minutes per side, depending on thickness.

The coating should become crisp and golden brown, while the chicken cooks completely through to an internal temperature of 165°F.

5. Rest and serve

Transfer the cooked cutlets to a wire rack or paper towel-lined plate. Let them rest for a few minutes before serving.

Serving Suggestions

These crispy Parmesan chicken cutlets taste wonderful with garlic mashed potatoes, roasted asparagus, buttered green beans, or a simple tomato salad. For an extra touch, serve with fresh lemon wedges and a little additional grated Parmesan.

KitchenMagic3 Tip

For an especially crunchy crust, use finely crushed crackers mixed with Parmesan. Avoid pressing the coating too firmly into the chicken, as a slightly textured surface creates a lovely crisp finish.
