Ingredients
- 4 medium potatoes, peeled and diced
- 1 small onion, chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small zucchini, sliced
- 1 cup mushrooms, sliced
- 6 large eggs
- ½ cup shredded mozzarella cheese
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Boil the potatoes for 8–10 minutes until just tender. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the onion and cook for 2–3 minutes.
- Add the peppers, zucchini, and mushrooms. Cook until the vegetables are softened.
- In a large bowl, whisk together the eggs, mozzarella cheese, garlic powder, salt, and pepper.
- Stir the cooked potatoes and vegetables into the egg mixture.
- Pour everything into a lightly greased baking dish or oven-safe skillet.
- Sprinkle Parmesan cheese evenly over the top.
- Bake for 25–30 minutes, or until the omelet is set and lightly golden.
- Let cool for 5 minutes before slicing and serving.
