Discover a delicious omelet packed with potatoes, eggs, vegetables, and cheese. A simple meal that’s perfect for breakfast, brunch, lunch, or dinner.

Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small zucchini, sliced
  • 1 cup mushrooms, sliced
  • 6 large eggs
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil the potatoes for 8–10 minutes until just tender. Drain and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add the onion and cook for 2–3 minutes.
  4. Add the peppers, zucchini, and mushrooms. Cook until the vegetables are softened.
  5. In a large bowl, whisk together the eggs, mozzarella cheese, garlic powder, salt, and pepper.
  6. Stir the cooked potatoes and vegetables into the egg mixture.
  7. Pour everything into a lightly greased baking dish or oven-safe skillet.
  8. Sprinkle Parmesan cheese evenly over the top.
  9. Bake for 25–30 minutes, or until the omelet is set and lightly golden.
  10. Let cool for 5 minutes before slicing and serving.

Serve warm with fresh fruit, whole-grain toast, or a green salad for a complete meal.
