Discover a classic okra recipe made with lean veal or beef, aromatic herbs, and a touch of paprika. A simple, satisfying dish that brings authentic Mediterranean flavors to your table.
You’ll need:
1.3 lbs veal or beef (preferably from the round or shoulder)
2.2 lbs fresh young okra
3 medium onions
Salt, pepper
Sweet paprika
Fresh parsley
1 medium tomato
A little all-purpose seasoning
Choose lean meat from the round or shoulder and cut it into bite-sized pieces. Peel and finely chop the onions, then sauté them together with the meat in a bit of oil. Season with salt, pepper, and a pinch of sweet paprika. Add enough water to cover and let it simmer gently. Stir in the diced tomato and plenty of chopped fresh parsley. Cook for about 30 minutes over low heat.
Meanwhile, clean the okra, rinse it well, and gently sauté it with a chopped onion, seasoning with salt, pepper, all-purpose seasoning, and a little more sweet paprika if desired. Once the okra is nearly tender, remove from the heat.
Arrange the cooked meat in a ceramic baking dish, top with the sautéed okra, and bake in a preheated oven at 400°F for about 5 minutes to let the flavors come together.
