Nutcake Ingredients:
2 cups all purpose flour,
2 cups granulated sugar,
2 eggs,
2 tsp. soda,
2 tsp. vanilla,
20 oz. canned crushed pineapple (not drained),
3/4 cup chopped pecans,
1/2 cup of butter,
8 oz. cream cheese (room temp),
1-3/4 cup powdered sugar.
Preparation
Mix the flour, granulated sugar, eggs, soda, vanilla, pineapple and juice, and pecans well. Pour into a 9×13 greased and floured pan. Bake in a preheated oven at 350F for 40 minutes.
Mix the butter, cream cheese, and powdered sugar together, then pour over the hot cake.
