Ingredients:
- 2 vanilla pudding (cook with 2 cups of water)
- 1 stick (8 tbsp) margarine, softened
- 1 cup powdered sugar
- 2 ½ cups ground biscuits (graham crackers or similar)
- 2 cups shredded coconut
Filling:
- ¾ cup sugar
- 1 cup water
- 9 oz dried figs, chopped
- ½ cup chopped walnuts
- ¼ cup finely chopped fruit jelly (optional)
Assembly & Topping:
- 3-4 kiwis, sliced
- Whipped topping or melted chocolate
Instructions:
- Cook the vanilla pudding with 2 cups of water, stirring until thickened. Let it cool slightly.
- In a separate bowl, beat the margarine with powdered sugar until creamy.
- Add the pudding, ground biscuits, and shredded coconut, then mix well. Divide the mixture into two equal parts.
- Flatten the first portion into a cake mold or serving plate. Arrange sliced kiwi on top.
Prepare the Filling:
- In a saucepan, cook the sugar with water until slightly thickened (not as dense as syrup).
- Add chopped figs and cook for a few minutes. Remove from heat, then stir in chopped walnuts and fruit jelly. Let it cool.
- Spread the filling over the kiwi layer.
Final Assembly:
- Shape the second portion of the cake mixture into a layer and place it over the filling.
- Cover the cake with whipped topping or melted chocolate.
- Garnish with extra kiwi slices.
