Mushroom Soup with Soy
Ingredients:
150 grams of mushrooms,
1 head of onion,
2 spoons of soy flour,
2 dl yogurt,
1 cube of soup concentrate,
parsley leaf,
oil,
pepper,
salt.
Preparation
Clean the mushrooms carefully, wash them and cut them into thin slices. Fry the chopped onion in heated oil, add the chopped mushrooms, then simmer together for about 10 minutes. Sprinkle the mushrooms with soy flour and fry for 5 minutes, then cover with a liter of water and add a cube of soup concentrate. Add salt and pepper, then cook for about 15 minutes. Mix yogurt into the finished soup, but do not let it boil, sprinkle with chopped parsley.
