Mirage cake ingredients:

20 eggs,
800 grams of sugar,
400 grams of ground walnuts,
4 spoons flour (flat),
375 grams of margarine,
125 grams of butter,
250 grams of sweet cream,
150 + 200 grams of whipped cream,
300 grams of cherries,
300 grams of pineapple,
150 grams of roasted almonds cut into slices.

Preparation

Beat 5 egg whites with 5 tablespoons of sugar and add 100 grams of ground walnuts and 1 tablespoon of flour. Mix the walnuts and flour slowly with the egg whites with a wooden or plastic spoon (never a metal one).
Bake 4 crusts like this.

Cake filling: mix 20 egg yolks well with 20 spoons of sugar, whiten and steam.
Cooking takes at least half an hour, and it is cooked when the bottom is pulled with a soldering iron and a mark remains, and large air bubbles appear on the top.
Cool the cake filling.
Beat margarine and butter to obtain a smooth mass. Beat 150 grams of whipped cream and 250 grams of sweet cream in a separate bowl, until the mass becomes firm. Add this mass to the previous one and assemble. Slowly add the cooked cold filling and beat with a mixer to make it uniform.

Peel 150 grams of almonds and cut them into slices with a knife and roast them in the oven at a medium temperature until they get a golden yellow color. Take care not to burn them. 300 grams of cherries, if frozen, sprinkle with 3 spoons of sugar and melt and cool in steam. Drain the juice from 300 grams of pineapple and cut it into pieces.

Filling the cake:
Divide the filling into 4 parts.
On the first crust, put one part of the filling to which chopped pineapple has been added.
Arrange the cherries evenly on the second crust and cover with the second quarter of the filling.
Fill the third crust with the part of the filling to which half of the roasted almonds have been added
Fill the fourth crust with the rest of the filling and process the cake around it.
When it cools down in the fridge, whip 200 grams of whipped cream and cover the outside of the cake, bread it with the remaining almond leaves and decorate as desired.
